市場に出回る魚は、水揚げ後、手当(神経抜き、血抜き、冷し込み、内臓除去等)を充分にされず一般的に流通しているため、臭みが出たり鮮度落ちも早いが、あらや商店で仕入れている鮮魚は全ての出荷主が現場で目利きをし、その魚に適した仕立てをし、特別に送ってくれている子たちである。
そのためシンガポール到着時に鮮度が良いのは勿論の事、旨みや食感を上げるための”熟成”にも向いている。
野菜や加工食品も、出来るだけ有機・無添加をセレクトし、安心して食べられる物を集めています。

Fish in the market are generally distributed without being thoroughly treated (de-veined, bled, chilled, gutted, etc.) after being landed, which causes the fish to smell and lose freshness quickly.
The fish are all specially prepared and sent to us by the owner of the fish.
This means that not only is the fish fresh when it arrives in Singapore, but it is also well suited for aging to enhance its flavor and texture.
Vegetables and processed foods are selected to be organic and additive-free as much as possible.
